Serviceberry Ice Cream

Ingredients
  

  • 2 cans coconut milk full fat will be richer than lite, but both work fine
  • 1 cup serviceberries
  • pinch of salt
  • 1 teaspoon vanilla
  • 3/4 cup sugar

Instructions
 

  • It's best if your coconut milk has been refrigerated. If not, room temperature will work, but you will have to wait longer for the ice cream to harden.
  • Blend all ingredients in a high-speed blender until smooth and add to your ice cream maker, following the manufacturer's instructions. Blend for 20-25 minutes, and transfer to a freezer-safe container. Freeze until firm.
  • If you don't have an ice cream maker, this recipe makes amazing popsicles!
